Salads normally tend to get boring when you eat the same type over and over again, so I tend to jazz up my salads each time. I absolutely love this salad as it's tasty tangy, sweet, and delicious! INGREDIENTS:

5 Cherry Tomatoes

3 Sundried Tomatoes

1 Avocado

A handful of Rocket Leafs

A Handful of Spinach

A handful of Mixed Salad Leafs

Mozzarella Slices

Salt

Pepper

Chilli Flakes

Balsamic Glaze:

2 Cups Balsamic Vinegar

1/2 Cup Brown Sugar

METHOD:

1) Wash and dry all your veggies and cut them up.


2) Into a large bowl add all the salad and mix well. Then add to a plate.


3) Add the Avocado and Mozzarella on top.


4) Balsamic Glaze:


•) Add balsamic vinegar & brown sugar in a small pot and place over medium heat. 


•) Bring to a gentle boil, then reduce heat to medium-low heat and let it simmer, stirring occasionally until the vinegar thickens (about 8-10 minutes). Allow cooling completely before serving!


5) Add the balsamic glaze, salt, pepper & chilli flakes on top of the salad and enjoy!


I also love adding Quorn to my salads and even crispy garlic/ onions.
